One of the oldest breweries from Himeji, Japan; the word Yaegaki originates from the oldest existing document in Japanese history, the Kojiki. It refers to a scene in a poem that speaks of the layers of clouds that billow around a palace in the sky. This poem highlights the celebration of a Shinto god’s joyful wedding, and celebration and joy is the focus of this Hyogo-based brewery!
The rice for this saké is milled to an extraordinary 40%! With aromatics of sweet apples similar to sherry, this junmai daiginjo is rich with coconut and honeycrisp apple notes on the palate. Light, sweet, and acidic: this saké is sure to win anybody’s heart!
