Gozona Pechuga Destilada con Anona is a special-occasion mezcal crafted by the Juárez family in San Agustín Amatengo, Oaxaca. It begins with roasted agave crushed by a bull-drawn tahona, fermented with native yeasts, and distilled twice. What sets pechuga apart is the third distillation, where the mezcal is infused with fruit, spices, and a suspended turkey breast. The meat never touches the liquid, but the rising steam gently cooks it, allowing proteins and aromatics to enrich the spirit and create that signature silky, almost creamy mouthfeel.

The addition of pawpaw fruit (from the Annona family) brings tropical notes reminiscent of mango, banana, pineapple, and melon, while warm hints of vanilla, coconut, and soft butterscotch mingle with roasted agave, herbal tones, and minerality. The finish is long, smooth, and lingering with smoky agave and a subtle tropical sweetness.

Pechuga mezcals are traditionally made only for celebrations and family gatherings, and every producer has their own secret recipe. They’re exceptional because they capture a moment, a season, and a sense of place in one bottle, blending wild fermentation, local fruit, and centuries-old technique into something truly singular. Gozona’s pechuga is rich, complex, and unforgettable. It's a fun flavor ride and a truly masterful expression of mezcal tradition.
