---------------
This Jura sparkler is for lovers of tension, texture, and serious refreshment. Crafted in the South Revermont of Jura using the traditional Champagne method, this biodynamic Crémant delivers laser-focused acidity balanced by subtle richness and a beautifully creamy mousse. Zero dosage keeps the wine bone-dry and precise, while long lees aging adds just enough brioche warmth to round things out.
Farmed biodynamically and organically, the wine is made with native yeasts and minimal sulfur, letting the place and the grapes do the talking. The result is a sparkling wine that feels energetic and mineral-driven but never austere. It is a natural fit for salty, rich foods and a dream pairing for seafood, cheese, and dishes that need a crisp, cleansing lift.
Pairings
Oysters, scallops, crab, and grilled fish
Comté cheese, ham and cheese pastries, cheese soufflés
Fried foods, salted butter dishes, anchovies, and rösti
Surprisingly excellent with sushi and Vietnamese cuisine
