Miquel Pons is a fine producer of Cava in the Penedès region just a train ride away from Barcelona, at the center of Spain's sparkling wine production.

Their philosophy is to respect the grape in order to get natural products. They vinify with very low levels of residual sugar and only use grapes harvested in their estates, as well as using slow pressings in various stages to get the best from each grape. They work only with local yeasts to maximize the expression of the terroir.
