Kolsch is strictly defined by the "Kolsch Konvention", an agreement between the members of the Cologne Brewery Association.

After the war, the Früh fam was more fortunate than other breweries, because the brewery was not destroyed in the war. Früh not only brewed its own Kölsch, but also for many other breweries whose facilities had been destroyed.
